Broad beans (also known as Fava Beans) are easy to grow and produce a good crop in proportion to the space required to grow them. They are usually eaten raw, boiled or roasted, but there are many other ways you can enjoy them. Here is a great seasonal Broad Bean Hummus Recipe.
Broad beans are extremely nutritious. They are an excellent source of protein, fiber, folate, manganese, copper, phosphorous, magnesium, iron, potassium, vitamin B1, and zinc, as well as containing other B vitamins and calcium.
Broad Bean Hummus Recipe:
Ingredients
- 315 g Broad Beans
- 1 garlic clove
- 1 tbsp tahini
- 1 tbsp lemon juice
- 3/4 tsp salt
- 3.5 tbsp olive oil
- 2 tbsp water (use the same water that you boil the beans in)
Method
- Boil the beans for 5 minutes in a little water and drain.
- Put all the ingredients, including the beans, into a blender and blend until you achieve a hummus consistency.
